Very Dark smoking

Black Forest ham, or the Schwarzwälder Schinken, is a variety of dry-cured smoked ham, produced in the Black Forest region of Germany. It is problaby the most wellknown black coloured meat product in Europe. It is cold smoked with juniper and/or fir tree to obtain the black colour. But also in Eastern Europe, and especially Poland, there is a long tradition for black smoked cold cuts. As example is the well-known Polish ham Szynka babuni. Flavourstream offers smoke flavours, that very quickly can develop a very dark almost black colour on all meat products.

Smokestream KFB and KFBNT are two of the most popular products. They are typically diluted from 1:1 to 1:3 with water, and the meat product is dipped from 1 -5 minutes. Less dilution and longer dipping time creates a darker colour. The smoky flavour is very mild despite the black colour.
